Yummy Lunch – Pizza Inspired Omelet

So today I woke up after a mostly sleepless night craving some pizza.  Actually…I’ve been craving pizza for about a week but  didn’t really want to buy a whole pie, so I decided that since egg is my favorite food, I’ll make a pizza omelet.  I used eggs, tomatoes, red onion, mozzarella cheese and some basil seasoning. It came out very yummy-  hubby and I enjoyed it very much.  It’s healthy and nutritious, and has lots of protein and healthy veggies.  Tomatoes are good for your prostate…and even if you don’t have a prostate…it’s still good for you.  Here is the recipe:


  • 1/2 small red onion
  • 1/2 small tomato
  • 1 skim mozzarella cheese stick
  • 2 eggs
  • 1/4 tbs butter (thin sliver)
  • dry basil (or fresh if you have it)
  • salt and pepper to taste

  • Heat up the pan on medium heat and melt the butter in it
  • Chop onion and tomato

  • Saute onions and tomatoes on one side of the pan until slightly soft
  • Crack eggs into pan and smoosh the yolks – alternatively you can use only egg white for a healthier version
  • Salt and pepper veggies and eggs

  • Once eggs harden slightly, spoon veggies on top and sprinkle with dry basil or use a few leaves of fresh basil (fresh is always better, I just didn’t have any on hand)

  • Add chopped mozzarella stick on top and fold egg on top of veggies to allow cheese to melt – alternatively, you can use less mozzarella to decrease fat content and calories
  • once cheese is melted plate and serve
