Meatloaf – Italian Meatball Style

So last night I was thinking about what to make for dinner tonight and wanted to utilize the frozen beef I had in the fridge.  I looked into the refrigerator and saw that I have an unopened jar of Prego and some fresh basil and spinach. I realized that those ingredients would lend themselves nicely to some Italian style cuisine, but I didn’t feel like rolling a bunch of meatballs, so I decided that I’ll make Italian Style Meatloaf.

  • Meatloaf Recipe
    • 2 lb of beef
    • 1 1/2 cups of chopped yellow onion – about 1 1/2 medium onions
    • 1/2 cup chopped cilantro
    • 1/4 cup chopped basil
    • 2 eggs lightly beaten

    • 1 packed cup of fresh chopped spinach – chop it semi finely so it can incorporate nicely into the beef
    • 3/4 cup of prego orginal pasta sauce
    • 1 can of chopped tomatos – italian style (basil/oregano/garlic)
    • 3 cloves of garlic finely chopped
    • 1 1/2 cups of Italian bread crumbs
    • 2 teaspoons of salt
    • 1/2 teaspoon of black pepper
    • 1/2 teaspoon of burger seasoning – whichever kind you have, and if you don’t that’s also ok
  • Mix all the meatloaf ingredients together and shape into 2 loaves on a baking pan

  • Glaze Recipe
    • 1 cup Prego Original Pasta sauce
    • 1 tbs brown sugar – or about 2 tbs of honey
    • 2 tbs of ketchup
    • 3 tbs of Honey BBQ sauce
    • 1 tbs of Korean Teriyaki sauce – can omit if you don’t have it

  • Mix glaze in a bowl

  • Cover loaves with glaze and place in a preheated oven at 375 degrees F

  • Bake for one hour and serve with some spaghetti or mashed potatoes

We just had this with some spaghetti and it was delicious!  Yummy Yummy Yum!
